Crudo is less a recipe than a habit of restraint. Buy the freshest fish you can find, slice it cold, and let a few bright things sit beside it without shouting.

You will need

200 g sushi-grade kingfish or sea bream, one blood orange, a pinch of fennel pollen or crushed fennel seed, flaky salt and your best olive oil.

Method

Chill the plate. Slice the fish across the grain into thin pieces and lay them flat. Segment the orange and squeeze the leftover pulp over the top. Finish with salt, fennel and a thread of oil, then serve before anyone sits down.

“Four minutes, one knife, no stove. That is the whole point.”
